Four Salter Brothers Hotels Recognised with MICHELIN Keys

Media Release | September 23, 2026

Salter Brothers’ focus on the global shift in consumer demand to lifestyle and boutique luxury, exceptional food and beverage, wellness and experiences have this year delivered four portfolio hotels that have been recognised in The MICHELIN Guide’s 2026 global hotel selection.

This is a significant milestone across our luxury hospitality portfolio, with two hotels maintaining their Two-Keys status, whilst two recently renovated properties, achieving their first Key, both awarded in under 12 months from re-opening.

The recognition marks several important achievements for Salter Brothers:

  • InterContinental Sydney Coogee Beach receives its first MICHELIN Key following its launch in December 2025. The recognition places the hotel among just two IHG properties in Australia to receive a MICHELIN Key and one of 18 InterContinental properties globally to achieve this distinction; and
  • Ardour Milton Park Bowral achieves its first Key in less than 12 months from opening. This is also the first property launched under the Ardour Hotels & Estates brand; and
  • Spicers Peak Lodge and Spicers Sangoma Retreat retain their Two-Key status following their recognition in 2025. This achievement reinforces our commitment to delivering distinctive “relaxed luxury” experience that defines our Spicers properties.

The MICHELIN Key is The MICHELIN Guide’s distinction for outstanding hotels. Properties are independently assessed by anonymous MICHELIN Guide inspectors against criteria including architecture and design, quality and consistency of service, personality and character, value and connection to destination.

Paul Salter, Managing Director of Salter Brothers, said “the recognition reflected the strength of the Group’s hospitality strategy, capability to deliver innovation and the people behind each property. To have four hotels recognised by The MICHELIN Guide is an achievement we are incredibly proud of, particularly with two of our newest destinations receiving their first Keys and two established retreats retaining Two Keys.

Our strategy is centred on investing in exceptional destinations and creating hotels with their own identity, character and connection to place. We are not seeking to create the same experience everywhere. We want each property to be memorable for what makes it unique.  This acknowledgement is ultimately a credit to our people. Their passion for hospitality, attention to detail and commitment to our guests are what bring these destinations to life”, Paul added.
